Dashi
( Basic Japanese soup stock )
Dashi is the basic Japanese soup stock. We use in many Japanese dishes. Learn how to make Dashi with Kombu (kelp) and Katsuobushi (bonito flakes).
Ingredients
- 2L cold water ( soft water is better )
- 30g Kombu
- 30g Katsuobushi
1.Put cold water and Kombu in a large saucepan and leave it longer than 30 minutes.
2.When Kombu gets softer, bring it to a boil over high heat.
And when it comes to a boil, turn the heat to low and cook for 20 minutes.
3.Put Katsuobushi into the pot and turn off the heat.
And leave it for 5 minutes.
4.Strain soup stock trough a sieve or a coffee filter into a bowl.
