Buta-no-Kakuni(Soy-Braised Pork)
Buta-no-Kakuni is a classic Japanese dish of braised pork belly. The pork is slowly cooked until the meat is tender, juicy.
Ingredients
- 500g pork belly
- A
- 2L water
- 200cc Sake(or Vodka)
- 10g Sliced Ginger
- B
- 200cc Dashi
- 50cc Mirin
- 40cc Soy Sauce
- 1 Tablespoon sugar
- 1 Star Anise
1.Prepare chunk of pork belly.
2. Put the chunk in a large pot and add A.
Bring it to a boil over high heat.
And when it comes to a boil, turn the heat to low and simmer for one hour.
Cover the pot with oven sheet or aluminum foil.
3.Cut the pork in big pieces.
And put them in a just the right size pot.
4.Add B in the pot and bring it to a boil over high heat.
When it comes to a boil, turn the heat to low and simmer for 15 minutes.
Place aluminum foil or oven sheet.Turn off the heat.
Let it stand until 30 minutes before serving.
The flavors will soak into the ingredients while cooling down.
When you heat it up again, pour the soup on top of the ingredients with a spoon a couple of times.
